CROSS REFRIGERATION SYSTEM
In our tests we aimed at checking a special temperature keeping mode efficiency (called “cross refrigeration system”) in the refrigeration cabinets developed and manufactured by the Aisberg company specialists. The above-mentioned method gives a possibility to lower the cabinet inside temperature during the evaporator defrost cycle.
The obtained findings turned to be very interesting. It is natural, that semi-prepared meat foodstuffs, kept in the experimental and control cabinets, suffered physicochemical, biochemical and organoleptic changes – the foodstuffs were getting out of order. But the experimental data show, that the rate of the above-mentioned changes were much lower in the cabinets with cross refrigeration system. That is to say, that in comparison with the control refrigeration cabinets:
- amino-ammonia nitrogen quantity in the tested meat was half as many;
- accumulation rate of the primary and secondary fat decay products in meat was 40% lower;
- quantity of some kinds of dangerous bacteria in boiled sausage were 57 times less;
- quantity of germs on the meat surfaces 1,7-2 times less;
- rate of germs growth in the tested samples is 2-3 times lower.
Furthermore, we’ve found out that foodstuffs drying and weight loss goes much slowly in the experimental refrigeration cabinets equipped with cross refrigeration system.
While finishing our experiments we tried to simulate the natural conditions of foodstuffs preservation. Within 24 hours we kept food in the experimental refrigeration cabinet, and then placed this food into a domestic and checking bacteria growth. The results were impressive: after being kept in the experimental cabinet foodstuffs continued being good within longer time, and still with less bacteria.
